Mi Mi Soup (Alias Vegetable Soup!) Recipe
- 3 lbs. stew meat
- 2-3 soup bones
- Water
- 2 lg. onions, minced
- 1 bunch celery, minced
- 1 head cabbage, minced
- 1 bag carrots, sliced
- 1 c. sugar
- 4 (10 ounce.) cans stewed tomatoes
- 2 (2 lb.) bags mixed vegetables
- 1-2 c. rice or possibly 3-4 peeled and minced potatoes
- Salt and pepper (coarse grnd) to taste
- Fill a very large soup pot 2/3 full of water.
- Add in stew meat and soup bone.
- Cook till very tender and meat falls off bone.
- Put pot in refrigerator (preferably overnight) till fat from meat congeals.
- Then skim fat off with a large soup spoon and throw away it.
- Heat remaining mix to boiling.
- Add in minced vegetables till semi-tender.
- Add in tomatoes and sufficient water to keep pot 2/3 full.
- Then add in sugar and allow to simmer 30 min.
- Add in mixed vegetables.
- Refrigeratetill tender.
- Add in rice or possibly potatoes and cook till ready.
- Salt and pepper to taste.
- 30 to 40 (1 c.) servings.
- NOTE: This can be stored in plastic containers and frzn.
