Yellow Rice With Peas
- 3 tablespoons vegetable oil
- 1 tablespoon achiote seeds
- 12 medium onion, minced
- 1 garlic clove, minced
- 2 cups long grain white rice
- 3 12 cups chicken broth
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 cup peas
- In a medium saucepan, heat oil over medium heat.
- Add achiote seeds and cook until seeds are sizzling and oil is a rich gold color.
- Remove from heat.
- With a spoon, scoop up and discard seeds, leaving oil in pan.
- Return pan to medium heat.
- Add onion and garlic and cook until softened, 2 minutes.
- Add rice and cook, stirring, 1 minute or until grains look opaque.
- Stir in chicken broth, salt and pepper.
- Bring to a boil, turn heat to low, cover pan and cook 18 mintues or until liquid is absorbed.
- Cover and let rice stand 5 minutes.
- Gently stir in peas.
