Yellow Rice With Peas

  1. In a medium saucepan, heat oil over medium heat.
  2. Add achiote seeds and cook until seeds are sizzling and oil is a rich gold color.
  3. Remove from heat.
  4. With a spoon, scoop up and discard seeds, leaving oil in pan.
  5. Return pan to medium heat.
  6. Add onion and garlic and cook until softened, 2 minutes.
  7. Add rice and cook, stirring, 1 minute or until grains look opaque.
  8. Stir in chicken broth, salt and pepper.
  9. Bring to a boil, turn heat to low, cover pan and cook 18 mintues or until liquid is absorbed.
  10. Cover and let rice stand 5 minutes.
  11. Gently stir in peas.
