Avocado, Corn, Tomato and Chicken Tortilla Soup

  1. Put chicken stock in small saucepan and bring to a simmer over medium heat.
  2. Season with salt & pepper to taste.
  3. Stir in corn and onion and cook 1 minute.
  4. Stir in chicken shreds and bring back to boil.
  5. Add lime juice and remove from heat.
  6. Divide avocado, tomato and cilantro between 2 soup bowls.
  7. Ladle stock over, dividing solids equally.
  8. Garnish with tortilla chips and enjoy.
