Chicken Rice Italia
- 3 lb. broiler-fryer chicken, cut up, or boneless chicken breasts
- 1 tsp. oregano leaves, crushed
- 1 (15 oz.) can Italian tomato sauce
- 1 c. Uncle Ben's converted rice
- 2 c. coarsely chopped zucchini or frozen Italian green beans
- 1 1/3 c. water
- 1 tsp. salt
- shredded Mozzarella cheese
- Preheat oven to 375u0b0.
- Remove excess fat from chicken; season with salt and oregano.
- Remove and put aside 1/4 cup tomato sauce. Combine remaining sauce, rice, zucchini, water and salt in a 12 x 8 x 2-inch baking dish; stir well.
- Arrange chicken over rice mixture.
- Cover tightly with foil; bake for 1 hour, or until chicken is tender and most of liquid is absorbed.
- Spoon reserved sauce over chicken; sprinkle with cheese.
- Return to oven for 2 or 3 minutes to melt cheese.
- Makes 6 servings (449 calories each).
