Chicken Rice Italia

  1. Preheat oven to 375u0b0.
  2. Remove excess fat from chicken; season with salt and oregano.
  3. Remove and put aside 1/4 cup tomato sauce. Combine remaining sauce, rice, zucchini, water and salt in a 12 x 8 x 2-inch baking dish; stir well.
  4. Arrange chicken over rice mixture.
  5. Cover tightly with foil; bake for 1 hour, or until chicken is tender and most of liquid is absorbed.
  6. Spoon reserved sauce over chicken; sprinkle with cheese.
  7. Return to oven for 2 or 3 minutes to melt cheese.
  8. Makes 6 servings (449 calories each).
