Orange-Blueberry Parfaits
- 1-1/2 gal. hot water (140F to 160F)
- 3/4 cup JELL-O Orange Flavor Sugar Free Gelatin
- 2 qt. vanilla wafers, crushed
- 1-1/2 qt. fresh blueberries Whole Foods 3 For $10.00 thru 02/09
- 3 cups prepared whipped topping
- Add hot water to gelatin mix; stir until completely dissolved.
- Refrigerate 45 min.
- to 1 hour or until slightly thickened.
- Pour 1 cup gelatin into each of 24 (8-oz.)
- parfait glasses (or into each of 4 parfait glasses for trial recipe).
- Cover each with layers of 1/3 cup wafer crumbs and 1/4 cup blueberries.
- Refrigerate 3 hours or until firm.
- Top each parfait with 2 Tbsp.
- whipped topping just before serving.
