Baby Beet and Bean Salad

• 450g can baby beets, drained and halved
• 50g rocket leaves
• 3 spring onions, diagonally sliced
• 150g green beans, blanched
• 1 small red onion, sliced
• 1/3 cup KRAFT Classic Mayonnaise
• 2 tablespoons milk
• 1 tablespoon lemon juice Safeway 4 ct For $5.00 thru 02/09
• 1/2 cup walnuts

1. Combine the beets, rocket, spring onions, beans and onion on a serving platter.
2. Combine the mayonnaise, milk and lemon juice and drizzle over salad.
3. Sprinkle with walnuts and serve.
4. NB: When baby beets are in season these can be scrubbed, boiled until tender and halved before placing into the salad.
5. The baby beet greens can be washed and used instead of the rocket.
