Soyful Salmon
- 1 lb salmon (flaked)
- 1 tablespoon lemon juice
- 8 ounces tofu (firm)
- 12 cup textured vegetable protein (dehydrated granules)
- 12 cup water (boiling)
- 6 ounces mushrooms (chopped)
- 4 garlic cloves
- 1 sweet potato (peeled, cubed, steamed)
- 2 cups cabbage (chopped)
- 2 cups spinach (chopped)
- 1 cup celery (chopped)
- 1 red pepper (chopped)
- 1 green zucchini (small, sliced thin)
- 1 yellow zucchini (small, sliced thin)
- 12 cup quick oats
- 1 cup skim milk
- 2 eggs
- 1 teaspoon salt (lemon pepper)
- 1 tablespoon basil
- 14 teaspoon cayenne pepper
- 1 teaspoon paprika
- Flake salmon, drain and cube tofu.
- Chop all vegetables into bite-size cubes or slices.
- Steam sweet potato and celery until tender.
- Boil one cup water and rehydrate TVP granuales.
- Heat the milk until just boiling and add the oatmeal.
- Heat oats 1 minute longer in microwave and let cool slightly then beat in eggs and thoroughly combine with salmon mixture.
- Add all spices minus the paprika.
- Spoon into prepared nonstick pan and spinkle with paprika.
- Bake in a 350 degree oven for one hour.
- Serve hot with a side of your favorite vegetable not included in this recipe to even further maximize nutritional content.
