Cajun Dirty Rice

  1. Remove hard membranes from giblets; chop or grind in food processor.
  2. Put skillet over high heat.
  3. When hot, add 2 tablespoons oil; add giblets and beef.
  4. Cook, stirring, until no longer pink (approximately 4 minutes).
  5. Using a slotted spoon, transfer to bowl and set aside.
  6. Pour remaining oil in skillet. When oil is hot, add celery, red pepper and chopped onion.
  7. Stir until vegetables are soft (approximately 7 minutes).
  8. Sprinkle in flour, oregano and cayenne pepper.
  9. Cook until flour is browned (approximately 2 to 3 minutes).
  10. Pour in broth; bring to boil; stir in giblets and beef.
  11. Add rice; stir until heated.
  12. Add green onions.
  13. Salt and pepper to taste.
