Julie's Meatloaf - Meat Loaf
- 1-1/2 sleeves of saltine crackers, crushed
- 2 eggs, slightly beaten
- 1/8 cup (30 ml) sweet pickle juice
- 2 lbs (.9 kg). ground beef
- 1/2 tsp (2 ml). garlic powder
- 1 tsp (5 ml). salt
- 1 tsp (5 ml). black pepper
- 1 medium green bell peppper, chopped
- 1 medium onion, chopped
- 1/2 cup (125 ml) BBQ sauce
- 1/2 cup (125 ml) tomato ketchup
- several thick slices of Provolone Cheese
- extra tomato ketchup, for the topping
- Preheat oven to 450 degrees (225 C.).
- Spray a large loaf pan with vegetable spray.
- Mix together well, by hand, the crackers, eggs, pickle juice, ground beef, garlic powder, salt, pepper, bell pepper, onion, BBQ sauce and tomato ketchup.
- Put half of this mixture into the prepared loaf pan.
- Lay several slices of the cheese on top of this mixture, making sure the edges of the cheese overlap each other.
- Put the remaining half of the beef mixture on top of the cheese.
- Lay several more slices of the cheese on top of this, again making sure the cheese overlap each other.
- Spread some extra tomato ketchup over the top of the cheese.
- Put the fully filled loaf pan on top of a cookie sheet.
- Bake for approximately 40 minutes or until done to suit you.
- NOTE: The cheese on top WILL be crunchy.
- NOTE: If mixture is really wet, when mixing it together, then you may want to add more crushed crackers.
- If mixture is really dry, then add more pickle juice, BBQ Sauce, or ketchup.
- Note: Can use frozen mixture of green peppers and onions, and can also use dill pickle juice, your choice.
- Note: This entree is really good with mashed potatoes and green peas as your side dishes
