Easy Eggplant Creole

• 1 onion, chopped
• 1 green pepper, chopped
• 8 ounces tomato sauce
• 1 garlic clove, minced
• 12 teaspoon salt
• 14 teaspoon oregano
• 14 teaspoon hot sauce
• 18 teaspoon pepper
• 1 eggplant, small, peeled and diced

1. Combine first 8 ingredients in a nonstick skillet.
2. Cover an d cook over low heat 10 minutes.
3. Add eggplant; cover and cook 20 minutes or until eggplant is tender; stirring occasionally.
