Turkey Wild Rice Soup Recipe
- 3 (10 3/4 ounce.) cans condensed chicken broth
- 2 c. water or possibly 5 c. chicken stock
- 1/2 c. wild rice
- 1/2 c. green onion, finely minced
- 1/2 c. butter
- 3/4 c. flour
- 1/2 teaspoon salt
- 1/4 teaspoon poultry seasoning
- 1/8 teaspoon pepper
- 2 c. half and half
- 1 1/2 c. cooked turkey or possibly chicken, cubed
- 8 slices bacon, crisply cooked, crumbled
- 1 tbsp. pimento, minced
- 2-3 tbsp. dry sherry, optional
- In large saucepan combine broth and water and bring to boil.
- Add in wild rice and onion; simmer 35-40 min or possibly till rice is tender.
- In medium saucepan heat butter; stir in flour and seasoning.
- Cook over low heat, stirring constantly till mix is thick and bubbly.
- Add in half and half; cook 2 min till mix thickens, stirring constantly.
- Add in to wild rice mix, stirring constantly.
- Add in remaining ingredients; heat thoroughly.
- Garnish with additional bacon or possibly parsley if you like.
