Turkey Noodle Soup
- 1 tbsp (15 mL) turkey fat skimmed from drippings or vegetable oil
- 2 large onions, chopped
- 2 small stalks celery, chopped
- 2 carrots, chopped
- 3 cups (750 mL) bite-size pieces roasted turkey
- 3 tbsp (45 mL) chopped fresh Italian (flat-leaf) parsley
- 2 tbsp (25 mL) chopped fresh dill
- 1 tsp (5 mL) dried thyme
- 1 tsp (5 mL) ground turmeric
- Pinch ground cloves
- Salt and freshly ground black pepper to taste
- 12 cups (3 L) chicken broth or turkey broth
- 1 cup (250 mL) broad egg noodles
- In a large soup pot, heat turkey fat over medium heat.
- Saute onions, celery and carrots until tender.
- Add turkey, parsley, dill, thyme, turmeric, cloves, salt and pepper; saute for 3 minutes.
- Add broth, reduce heat and simmer for 15 minutes.
- Add noodles and simmer for 15 minutes.
