Gluten Free Chocolate Chip Cookies
- 2 14 cups brown rice flour
- 1 teaspoon baking soda
- 12 teaspoon xanthan gum
- 1 cup butter (softened)
- 34 cup packed brown sugar
- 14 cup sugar
- 1 (3 1/2 ounce) package vanilla instant pudding mix
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips
- 1 cup walnut pieces (optional)
- Preheat oven to 350 degrees.
- In a bowl mix rice flour, baking soda and xanthan gum and set aside.
- In another bowl with a hand mixer, cream the butter and then add both sugars and mix well.
- Add pudding mix and blend into mixture.
- Now add eggs and vanilla extract and mix well.
- Blend in the flour mixture just until it comes together as a dough.
- By hand knead in the chocolate chips (and nuts if desired) until evenly distributed.
- Drop dough by rounded spoonfuls on ungreased cookie sheets (approximately 2 Tbs.
- each).
- I was able to fit 12 on a cookie sheet without them running into each other while baking.
- Bake 12-14 minutes until edges are golden brown.
