Manicotti Florentine Recipe
- 1 (10 ounce.) pkg. frzn minced spinach
- 1/2 c. minced onion
- 1 clove garlic, chopped
- 1/2 c. low fat cottage cheese
- 2 teaspoon basil
- 1/2 teaspoon oregano
- 8 manicotti noodles, uncooked
- 2 (8 ounce.) cans tomato sauce (or possibly your favorite spaghetti sauce)
- 1/4 c. shredded part skim Mozzarella
- Heat oven to 375 degrees.
- Cook spinach according to package directions with onion and garlic.
- Drain.
- Stir in cottage cheese, 1 tsp.
- basil and oregano; set aside.
- Cook manicotti in boiling water 4 min; drain.
- Spread 1 1/2 cans tomato sauce in bottom of 11"x7" dish.
- Stuff each shell with spinach mix; place in dish.
- Pour remaining 1/2 sauce over manicotti.
- Sprinkle with remaining basil.
- Top with Mozzarella cheese.
- Cover, bake 25 to 30 min.
