Lime & Coriander Chicken Skewers

  1. Thread chicken strips onto 8 pre-soaked wooden skewers and place into a shallow dish.
  2. Pour over 1/4 cup of the dressing and coat chicken well.
  3. Cover and refrigerate for 30 minutes.
  4. Place skewers onto a pre-heated grill plate and cook for 5-6 minutes until cooked through.
  5. Spread each pita with some peanut spread down the centre, top with salad mix, sprouts, onion, carrot, chicken (remove skewers) and drizzle with remaining dressing.
  6. Fold up and enjoy immediately.
