Lime & Coriander Chicken Skewers
- 400g skinless chicken breast fillets, cut into 8 thin strips Whole Foods 1 lb For $3.99 thru 02/09
- 1/3 cup KRAFT FREE* Thai Lime & Coriander Dressing
- 4 small wholemeal pita breads
- 2 tablespoons KRAFT* Light Smooth Peanut Spread
- 60g salad mix
- 50g snow pea sprouts
- 1/2 red onion, sliced
- 1 large carrot, peeled and cut into ribbons with a peeler
- Thread chicken strips onto 8 pre-soaked wooden skewers and place into a shallow dish.
- Pour over 1/4 cup of the dressing and coat chicken well.
- Cover and refrigerate for 30 minutes.
- Place skewers onto a pre-heated grill plate and cook for 5-6 minutes until cooked through.
- Spread each pita with some peanut spread down the centre, top with salad mix, sprouts, onion, carrot, chicken (remove skewers) and drizzle with remaining dressing.
- Fold up and enjoy immediately.
