Tarator - Cold Summer Soup
- 400 ml yogurt
- 300 ml cold water
- 1 large cucumber or two small, peeled and finely chopped.
- 3 tbsp Sun flour or olive oil
- 1 Salt to taste
- 1 A few stems of fresh fennel, or dry if you do not have fresh
- 2 tbsp ground walnuts
- 2 clove garlic, crushed to a puree.
- Mix all the dry ingredients.
- Leave the garlic out if you are off to a business meeting or a date.
- Add the water to the yogurt and stir well, add to the rest of the ingredients.
- You can use more or less water according to your preferences.
- Add some ice cubes inside to be cold and refreshing on a hot summer day.
- Garnish each bowl or cup of soup with some fennel and sprinkle some more walnuts if you like.
- More salt and black pepper can be offered additionally for everyone to add to taste.
