Grampy's Christmas Eve Marinated Seafood Recipe
- 3 pound shrimp (30 count size)
- 3 pound fresh lg. scallops
- 1 pound squid
- 1/4 c. very sm. dice onion
- 10 lg. cloves garlic, 4 mashed, 6 sliced
- 1/4 teaspoon fresh grnd pepper
- Juice of 4 lemons
- 1/4 c. extra virgin olive oil
- 1 bunch Italian parsley
- Peel and devein shrimp.
- Wash and boil in 4 qts salted water and 10 stems from the parsley.
- Cook 3-5 min.
- Drain shrimp and shock in cool water.
- Reserve 1 qt water.
- Bring shrimp water to boil.
- Add in scallops.
- Simmer about 10 min.
- Remove scallops, any small broken ones, continue to boil.
- Pick your worst 6 scallops, and dice up fine.
- Add in to pot and boil for about 15 min.
- Cut shrimp lengthwise, cut scallops in half or possibly if large in 4 pcs.
- Slice squid into very thin strips (1/4 x 3 inches).
- Blanch in boiling stock 1 minute.
- Remove, add in to shrimp and scallops.
- Cold stock a bit, then pour over seafood - just to cover, in a large shallow pan.
- Pick 1/4 c. parsley leaves from stems.
- Chop up half, keep other half whole.
- Add in extra virgin olive oil and lemon juice, black pepper and onions.
- Mix well and pour proportionately over seafood.
- Shake pan so marinade mixes with seafood and stock.
- Keep at room temperature 1 hour.
- Chill 2 days.
- Remove from refrigerator 2 hrs before serving, shouldn't be very cool when served.
