Empanadas
- 12 lb cooked chicken, shredded
- 12 cup onion, chopped
- 1 garlic clove, minced
- 2 tablespoons olive oil
- 1 cup cheddar cheese, grated
- 14 cup picante sauce
- 1 teaspoon chili powder
- Tabasco sauce
- salt
- 36 inches pie crusts
- Preheat oven to 450 degrees.
- Saute chicken, onion and garlic in oil until onion is clear.
- Add cheese, picante sauce and seasonings.
- Heat thoroughly.
- Cit pie crusts into 2 1/2 inch circles with a biscuit cutter.
- Spoon 1 teaspoon of meat mixture in the center of each circle.
- Fold in half and seal by pinching the edges with your fingers.
- Bake 10 - 12 minutes until golden brown.
