Mango-Cucumber Salad with Mint
- 2 tablespoons lime juice
- 2 teaspoons fish sauce
- 2 teaspoons rice vinegar
- 2 teaspoons chili-garlic sauce
- 1 teaspoon sugar
- 2 tablespoons canola oil
- 2 English cucumbers, cut into 1/2-inch dice
- 2 mangoes, cut into 1/2-inch dice
- 1/4 cup chopped mint
- Whisk together the lime juice, fish sauce, rice vinegar, chile-garlic sauce, sugar and canola oil.
- Toss with the cucumber, mangoes and mint and serve.
