Greek Bow-Tie Pasta Salad
- 1 lb bow tie pasta
- 12 cup extra virgin olive oil
- 13 cup lemon juice (probably about one lemon's worth)
- 1 tablespoon anchovy paste
- 2 garlic cloves, minced
- 1 teaspoon dried oregano leaves, crumbled
- 1 pinch each salt and pepper
- 1 English cucumber, diced
- 2 cups small cherry tomatoes
- 2 cups good quality black olives, pitted
- 1 cup chopped red onion
- 12 cup chopped fresh parsley
- 1 cup finely diced feta cheese (about 4 oz/125 g)
- In a large pot of boiling salted water, cook pasta for 8 to 10 minutes or until almost tender but firm; drain well let cool.
- Meanwhile, whisk together oil, lemon juice, anchovy paste, garlic, oregano, salt and pepper; toss with pasta.
- Add tomatoes, sliced olives (leave whole if small), cucumbers, onion and parsley; toss to coat well.
- Gently stir in feta cheese.
- Chill until ready to eat.
