Ginger Truffles

  1. Combine butter, cream and ground ginger in a saucepan.
  2. Cook over low heat unil butter melts and cream bubbles around edges.
  3. Remove from heat,.
  4. Chop chocolate and add to mixture.
  5. Cover with a lid until melted.
  6. Stir until smooth,.
  7. Mix glace ginger, egg yolk and drambuie.
  8. Chill until firm.
  9. Form into balls and roll into cocoa powder to cover.
  10. Top with ginger.
