Ginger Truffles
- 12 cup butter
- 12 cup double cream
- 1 teaspoon ginger
- 1 cup chocolate
- 2 tablespoons chocolate
- 2 tablespoons glace ginger, chopped finely
- 1 medium egg yolk
- 1 tablespoon drambuie
- cocoa powder, sieved
- crystallized ginger
- Combine butter, cream and ground ginger in a saucepan.
- Cook over low heat unil butter melts and cream bubbles around edges.
- Remove from heat,.
- Chop chocolate and add to mixture.
- Cover with a lid until melted.
- Stir until smooth,.
- Mix glace ginger, egg yolk and drambuie.
- Chill until firm.
- Form into balls and roll into cocoa powder to cover.
- Top with ginger.
