Spanish Peanut Cookies

  1. Heat oven to 350F.
  2. Combine brown sugar, butter and shortening in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add eggs and vanilla; continue beating until well mixed.
  5. Add flour and baking soda; beat at low speed, scraping bowl often, until well mixed.
  6. Stir in peanuts.
  7. Drop dough by level tablespoonfuls, 2 inches apart, onto ungreased cookie sheets.
  8. Bake 8-10 minutes or until light golden brown.
