Veggie Chili
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 14 teaspoon cinnamon
- 1 medium onion
- 1 cup instant brown rice
- 1 (28 ounce) can crushed tomatoes
- 1 (15 1/2 ounce) can pinto beans
- 1 (15 1/2 ounce) can black beans
- 1 cup frozen corn
- 1 (4 ounce) can diced green chilies
- 4 honey-wheat tortillas
- Thaw corn and drain and rinse beans.
- In pan with heated oil, add onion and saute for five minutes.
- Add garlic and saute for two more minutes.
- Add tomatoes, beans, corn, chilies and spices.
- Cover and simmer on low heat for 20 minutes.
- Serve and enjoy over rice and tortillas.
