French country soup

  1. in a large pot (7-9quart), saute bacon in a little oil, until just starts to Brown.
  2. Add all vegetables, salt and pepper and saute on high heat until tender, about 10-20 minutes, stir occasionally.
  3. Add garlic, thyme, bay leaf, salt and pepper and stock and bring to a boil on high.
  4. Add more water if desired.
  5. Once boiling reduce heat to medium and let cook until vegetables are tender, about 25-35 minutes.
  6. Add beans and simmer another ten minutes.
  7. serve.
