French country soup
- 2 slice celery stalks
- 1 slice onion
- 4 oz bacon sliced
- 2 slice carrots peeled
- 1/4 slice small green cabbage
- 3 garlic gloves minced
- 1 bunch fresh thyme sprigs
- 1 bay leaf
- 1 salt/pepper
- 14 cup chicken or vegetable stock
- 2 can white beans (15oz)
- in a large pot (7-9quart), saute bacon in a little oil, until just starts to Brown.
- Add all vegetables, salt and pepper and saute on high heat until tender, about 10-20 minutes, stir occasionally.
- Add garlic, thyme, bay leaf, salt and pepper and stock and bring to a boil on high.
- Add more water if desired.
- Once boiling reduce heat to medium and let cook until vegetables are tender, about 25-35 minutes.
- Add beans and simmer another ten minutes.
- serve.
