Chicken Enchiladas Recipe
- 2 c. cooked chicken or possibly turkey
- 1 c. lowfat sour cream
- 1 c. grated Cheddar cheese
- 1 c. minced green onion
- 1 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon cumin
- 10 flour tortillas
- 2 cans Old El Paso green chili enchilada sauce
- Shredded Monterey Jack cheese
- Mix all ingredients except tortillas, enchilada sauce and Monterey Jack cheese.
- Fry tortillas quickly.
- Place meat mix in center of tortilla and roll tightly.
- Place seam side down in large, greased pan.
- Pour enchilada sauce over and top with Monterey Jack cheese.
- Bake at 350 degrees for 30-45 min.
- This is a great way to use leftover turkey.
- This also freezes well before baking.
