Pickled Pig's Feet Recipe
- 6 pigs feet, scrubbed & rinsed
- Cover with cool water in heavy kettle.
- Season with salt and garlic to taste and simmer several hrs till meat separates from bone.
- In saucepan, simmer for about 5 min: 1 tbsp.
- pickling spice
- Throw away spice bag.
- Set vinegar aside.
- Cold feet - remove bones.
- Stir spiced vinegar, 1 tsp.
- sugar and 1 minced warm red pepper into meat mix.
- While hot, pack meat and juices into wide mouth jar and chill.
