Potato and Cheese Casserole

  1. Combine potato slices, bacon and spring onions and place into a large microwave ring container (see tip below).
  2. Cover and cook in microwave oven on HIGH for 10-12 minutes.
  3. Top with cream and cheddar cheese.
  4. Cook on HIGH for a further 3-4 minutes or until heated through and cheese melts.
  5. (Alternatively, place potato slices, bacon and spring onion in a lightly greased ovenproof casserole dish.
  6. Top with cream and cheese, cover and bake at 180C for 1 hour.
  7. Bake uncovered a further 10 minutes.)
  8. Serve with cream sauce spooned over.
