Caramel Slices Recipe

  1. Grease a 7 inch square tin.
  2. To make the base: Sieve the flour and salt in a bowl.
  3. Add in sugar and a small knob of butter.
  4. Rub the fat into flour and sugar.
  5. Knead into a ball.
  6. Press mix into base of it and make it even.
  7. Bake at 180C/350F/gas mark 4 for25 min till golden.
  8. For the filling: Put the margarine, sugar, syrup and condensed lowfat milk into a saucepan and stir over a gentle heat till sugar has dissolved.
  9. Bring to the boil and stirring constantly boil mix gently for 7 min.
  10. Add in the essense, beat well and pour onto the shortbread base.
  11. Leave the mix to cold and set.
  12. Coat with plain chocolate.
  13. Cut into square slices when set.
