Fiesta Eggrolls with Creamy Cilantro Sauce

  1. Heat oven to 425F.
  2. Mix sour cream, cilantro and zest.
  3. Refrigerate until ready to use.
  4. Heat oil in medium skillet on medium-high heat.
  5. Add next 6 ingredients; mix well.
  6. Cook 3 to 4 min.
  7. or until meat is done, stirring frequently.
  8. Stir in beans; cool 5 min.
  9. Add cheese; stir.
  10. Spoon about 1 Tbsp.
  11. meat mixture down center of each won ton wrapper; roll up tightly.
  12. Place, seam-sides down, in 15x10x1-inch pan sprayed with cooking spray.
  13. Bake 10 min., turning after 5 min.
  14. Serve warm with dipping sauce.
