Biscayne Bay Chowder Recipe
- 4 lbs. fish (grouper) fillets, cubed
- 1 pound salt pork, cut into 1/4 inch cubes
- 1 pound onions, minced
- 4 lg. potatoes, peeled and cut into sm. cubes
- 1/4 green pepper, minced
- 1 can tomato soup
- 2 tbsp. butter
- 2 regular cans evaporated lowfat milk
- 1 quart. chicken stock
- 1 bay leaf
- 1/4 teaspoon thyme
- Warm sauce to taste
- Brown salt pork.
- Add in onion and saute/fry briefly.
- Add in stock, potatoes and soup and cook slowly about 10 min.
- Add in fish and cook till fish is flaky, about 10 min more.
- Add in butter, lowfat milk, and seasonings.
- Simmer briefly.
- Add in more seasoning, if needed.
- Makes about 12 bowls or possibly 24 c..
