Buttered Homemade Noodles

  1. In a mixing bowl, stir together the yolks, whole egg, and water.
  2. Add 3 cups of the flour and mix well to combine into a dough.
  3. Sprinkle kneading surface with the remaining flour.
  4. Turn dough out onto floured surface.
  5. Gently knead dough into a ball.
  6. Let rest for 15 minutes.
  7. On floured surface, roll out dough to 1/16-inch thickness.
  8. Let dry for 1 hour.
  9. Cut into strips at a width you prefer (1/4 to 3/4 inch wide).
  10. Cook in boiling salted water* for 4 to 6 minutes or until tender.
  11. Drain and toss noodles with butter or margarine.
  12. Sprinkle with crushed crackers.
  13. **Note:** Instead of water, you can cook the noodles in boiling broth, if you like.
