Brown Sugar & Kinako (Roasted Soy Flour) Plain Bread Rolls

  1. Put all the ingredients into a bread maker, and wait until the 1st rising is finished.
  2. (Or, you can knead it by hand.)
  3. When the dough is ready, place on a surface dusted with flour, and gently press the air out.
  4. Divide into 8 portions, roll into balls, and let them rest for 15 minutes.
  5. Form into shapes: Flatten each ball with a rolling pin, and fold the top and bottom flaps to meet in the middle.
  6. Fold it in the middle, and close the seam completely.
  7. Place the rolls seam-down on a pan, and allow them to rise (2nd rising) until they are 1.5 to 2 times their original size.
  8. Mine took 30 minutes at 40C.
  9. Bake for 10 minutes in an oven preheated to 200C.
