Not My Sisters Poppy Seed Casserole
- 1 lb chicken tenders
- 2 (10 1/2 ounce) cans cream of chicken soup
- 12 -16 ounces sour cream
- 1 tablespoon lemon pepper
- 1 tablespoon poppy seed
- 1 teaspoon sea salt
- 12 cup butter
- 60 Ritz crackers
- 4 cups cooked jasmine rice
- Marinade the chicken in recipe #92702.
- I let it sit for a couple of hours and bake at 350 degrees for about 30 minutes.
- Let the chicken cool then shread.
- Mix the rest of the ingredents down to salt.
- (The lemon pepper to taste.)
- I just like it to be in the background and not to overpowering.
- Meanwhile melt the butter and add to the crushed crackers.
- Place 1/2 the cracker mixture in the bottom of a 9 x 12 casserole dish.
- Spread the chicken mixture on top then top with the rest of the crackers.
- Bake at 350 degrees for 30 minutes or until heated through and crackers are crunchy.
- Serve over the rice.
