Provencal Rub for Roast Turkey

  1. Pulse lavender, salt, seeds, thyme, and peppercorns into a spice grinder until mixture is fine but not powdery, about 6 pulses.
  2. Rub olive oil over and under skin of turkey.
  3. Repeat with 6 tablespoons herb rub.
