Sake Steamed Cabbage & Salt-Rubbed Chicken

  1. Poke the chicken thighs with a fork and rub salt all over.
  2. Let sit for 15 minutes.
  3. Roughly chop the cabbage.
  4. Spread the cabbage in a thick bottomed pot.
  5. Add the ingredients and place the chicken, as is, on top.
  6. Cover the pot with a lid and turn the heat to high.
  7. Once it begins to bubble, lower the heat to low and let it simmer and steam for 20 minutes.
  8. Place the cabbage with the juices on a dish.
  9. Cut the chicken into bite-sized pieces and put on top of the cabbage.
  10. Sprinkle with coarsely ground black pepper, garnish with green onion, and enjoy.
