Sake Steamed Cabbage & Salt-Rubbed Chicken
- 2 Chicken thigh
- 1 tsp Salt
- 500 grams Cabbage
- 100 ml Sake
- 1 piece Ginger (julienned)
- 1 clove Garlic (thinly sliced)
- 1 Coarsely ground black pepper
- 2 Green spring onion (sliced on a slant)
- Poke the chicken thighs with a fork and rub salt all over.
- Let sit for 15 minutes.
- Roughly chop the cabbage.
- Spread the cabbage in a thick bottomed pot.
- Add the ingredients and place the chicken, as is, on top.
- Cover the pot with a lid and turn the heat to high.
- Once it begins to bubble, lower the heat to low and let it simmer and steam for 20 minutes.
- Place the cabbage with the juices on a dish.
- Cut the chicken into bite-sized pieces and put on top of the cabbage.
- Sprinkle with coarsely ground black pepper, garnish with green onion, and enjoy.
