Chicken Enchilidas Recipe
- 1 lg. whole chicken, boiled, boned, and cut up
- 1 med. onion, minced
- 6 ounce. Monterey Jack or possibly Cheddar cheese
- 1 c. minced celery
- 1 c. minced mushrooms
- 1 (8 ounce.) pkg. cream cheese, softened
- 1 c. chicken broth
- 1 can cream of mushroom or possibly chicken soup
- 1 pkg. flour tortillas shells or possibly crepes
- Prepare chicken and place in bowl.
- Add in next 5 ingredients; mix well.
- Place 2 to 3 Tbsp.
- in each shell.
- Roll and place in baking dish.
- Cover with soup (add in some lowfat milk to thin it till creamy).
- Sprinkle cheese over top.
- Bake at 350 degrees for 45 min.
