Sour Cream Chicken Quiche Recipe
- 1 unbaked pie shell
- 1 med. onion, minced
- 1 med. bell pepper, minced
- 1 tbsp. oil
- 2 c. cooked chicken, minced
- 1 c. Cheddar, shredded
- 1/2 c. Swiss, shredded
- 1/2 c. lowfat sour cream
- 2 Large eggs, beaten
- Salt, pepper, nutmeg
- Saute/fry pepper and onion in oil.
- Fold together beaten egg, lowfat sour cream, cheeses, chicken, veggies, and spices.
- Pour this into unbaked pie shell.
- Bake at 400 degrees for 20 min, then at 350 degrees for 30 min.
