Oriental Beef Lo Mein
- 8 ounces uncooked dried vermicelli or spaghetti
- 3/4 cup sour cream
- 1 (1- to 1 1/2-ounce) envelope stir-fry seasoning mix
- 1 tablespoon sesame oil or vegetable oil
- 3/4 pound pre-cut beef stir-fry meat
- 1 teaspoon finely chopped fresh garlic
- 4 cups broccoli slaw mix
- 1 medium red bell pepper, cut into thin strips
- Cook vermicelli according to package directions.
- Drain.
- Keep warm; set aside.
- Whisk sour cream and stir-fry seasoning mix together in bowl until well blended; set aside.
- Heat oil in 4-quart saucepan or wok; add beef strips and garlic.
- Cook over medium-high heat, stirring constantly, 2-3 minutes or until beef is no longer pink.
- Add broccoli slaw mix and pepper; continue cooking, stirring constantly, 1-2 minutes or until vegetables are crisply tender.
- Reduce heat to low; stir in sour cream mixture.
- Continue cooking 1 minute or until heated through.
- Add cooked vermicelli; toss to coat well.
