A Mayonnaise That Won't Make Your Heart Explode

• 1 egg
• 12 teaspoon mustard
• 12 teaspoon salt
• 2 teaspoons lime juice (optional)
• 1 cup safflower oil, high oleic and expellar pressed
• pepper

1. Put all ingredients, except the oil, in a blender and blend until creamy, gradually adding in the oil.
