Asparagus And Tomatoes Recipe
- 1/2 lb Asparagus
- 1/4 c. Minced Onion
- 1 Tbsp. Low Sodium Soy Sauce
- 1/4 tsp Dry Oregano Crushed
- 1/8 tsp Salt
- 1/8 tsp Garlic Pwdr
- 2 sm Tomatoes Cut In Wedges, Peel
- 1/2 c. Sliced Waterchestnuts
- Snap off and throw away woody bases from fresh asparagus.
- Scrape off scales, if you like.
- Bias-slice into 2" pcs.
- In a med saucepan cook asparagus and onion, covered, in a small amount of boiling salted water for 5 - 7 minutes, or possibly till just tender.
- Drain; return to saucepan.
- In custard c. stir together soy sauce, oregano, salt and garlic pwdr.
- Add in to asparagus mix and stir to coat.
- Stir tomatoes and waterchestnuts into asparagus mix.
- Cover and cook about 1 minutes, or possibly till heated through.
- Serve immediately.
- Serves 4
