glazed meatloaf
- 1/3 cup green onuon
- 1/4 cup fine chop red or yellow peppers
- 1/4 cup chopped or shredded carrots
- 2 slightly beaten egg whites
- 1/2 cup finely crushed saltine crackers (14crackers)
- 2 tbsp fat free milk
- 2 tbsp chill sauce
- 1 tbsp fresh basil or oregano or 1/2 teaspoon dry
- 1/4 tsp black pepper
- 1 lb extra lean ground beef
- 1/4 cup chilli sauce
- 1 tbsp Brown sugar
- 1 tsp vinegar
- 2 tbsp dried crushed red peppers for xtra kick optional
- set oven to 350F
- spry non-stick coating in small skillet.
- add green onions, sweet peppers, and carrots.
- cook over medium heat 5-8 minutes or until tender stirring occasionally.
- Remove from heat cooling slightly
- in a large mixing bowl combine egg whites, crackers, milk, the 2tbsp chilli sauce, basil,or oregano, and black pepper.
- add the cooked vegetables and the ground beef, mix well.
- pat mixture into a 7 1/2"x 3 1/2"x2" loaf pan.
- invert pan into a shallow baking dish.
- bake at 350F for 30 min
- mean while for glaze in a small mixing bowl stir together the1/4 cup chilli sauce, Brown sugar and vinegar.
- spoon glaze over meat loaf and bake for 15-20 min until no pink remains.
