Rustic Cedar Shrimp with Lemon Butter

  1. Preheat grill.
  2. Oil the cedar plank on one side.
  3. Assemble the plank: Toss the tomatoes and onions with 1 tablespoon of the oil and Essence.
  4. Lay out the tomatoes and onions on the cedar plank, making sure not to get to close to the edge .
  5. In the same bowl, toss the shrimp with the remaining oil, and season with creole spice.
  6. Lay out the shrimp on top of the tomatoes and onions.
  7. Place in the center of the grill.
  8. Cover and cook 10 minutes.
  9. Serve with Lemon Butter.
  10. Combine all ingredients thoroughly.
  11. Yield: 2/3 cup
  12. Reduce the wine and lemon juice with the shallots for 2 minutes.
  13. Add the cream and reduce for 2 minutes.
  14. Using a whisk, slowly incorporate the butter.
  15. Season.
  16. Remove the plank from the grill and place on a serving plate.
  17. Drizzle with the sauce.
