Grape Sorbet
- 1/3 cup sugar
- 1/3 cup plus 1/4 cup water
- 1 1/2 pounds red grapes, preferably Concord
- 1 1/2 tablespoons lemon juice
- In a small saucepan over low heat, combine the sugar and 1/3 cup water and cook, stirring, until the sugar dissolves.
- Set aside to cool.
- Combine the grapes and the remaining 1/4 cup water in a medium saucepan over medium-high heat.
- Cook until the grapes start releasing their liquid.
- Reduce the heat to medium and simmer until the grapes break apart, about 3 minutes.
- Pass the mixture through a food mill or a fine sieve.
- Let cool.
- Stir in the lemon juice followed by the sugar syrup until sweetened to your liking.
- Refrigerate until cold.
- Transfer the mixture to an ice-cream maker and freeze according to the manufacturers instructions.
