Mad Dogs Southwestern Potato Latkes

  1. Combine the first eleven ingredients.
  2. Heat oil until hot and just starting to smoke.
  3. Fry spoonfuls until golden brown and crispy.
  4. Drain on paper towels.
  5. Serve with sour cream, guacamole and salsa!
