Cheesy Potato Cups

  1. Preheat oven to 350 degrees F. Pierce potatoes with fork.
  2. Bake 1 hour.
  3. Let stand 5 minute Cut potatoes in half crosswise; scoop out centers, leaving 1/8-inch-thick shells.
  4. Place potatoes in large bowl.
  5. Add butter and milk; beat with electric mixer on medium speed until fluffy.
  6. (If potatoes are dry, beat in small amount of additional milk.)
  7. Spoon evenly into shells; lightly press 1 cheese cube in center of each potato.
  8. Place potatoes in muffin pan.
  9. Bake 30 minute or until heated through.
  10. Sprinkle each with 1/2 teaspoons bacon bits.
