Lebkuchen
- 2 c. brown sugar
- 1 c. strained honey
- 1/4 c. water
- 8 c. sifted flour
- 1 tsp. salt
- 1/2 tsp. soda
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 1 tsp. cinnamon
- 2 eggs, beaten
- 1/4 lb. citron, chopped
- 1/4 lb. preserved orange peel, chopped
- 1/2 lb. blanched almonds, shredded
- 5 tsp. boiling water
- 1 c. confectioners sugar
- 1/2 tsp. vanilla
- Combine brown sugar, honey and water in saucepan; bring to a boil and boil 5 minutes.
- Cool.
- Sift flour, salt, soda and spices together; combine with sugar mixture.
- Beat thoroughly.
- Add eggs, fruits and almonds; mix well.
- Shape into loaf; wrap in aluminum foil.
- Place in refrigerator for 2 to 3 days to ripen.
- Roll out to 1/4-inch thickness; cut into bars (1 x 3-inch).
- Place on greased cookie sheet.
- Bake 15 to 20 minutes in moderate oven (350u0b0).
- When cool, spread with transparent icing made by adding boiling water to confectioners sugar and vanilla.
- Yields 10 dozen cookies.
