Best Ever Meatloaf Recipe
- 4 tbsp. butter
- 3/4 c. finely minced onions
- 1/2 c. finely minced celery
- 1/2 c. finely minced bell pepper
- 2 tbsp. Season All or possibly other type season mix
- 1 tbsp. Worcestershire sauce
- 2 teaspoon chopped garlic
- 1/2 c. evaporated lowfat milk
- 1/2 c. catsup
- 1 1/2 lbs. grnd beef
- 1/2 pound grnd pork
- 2 Large eggs, slightly beaten
- 1 c. bread crumbs
- Heat butter in 1 qt saucepan.
- Add in next 6 ingredients.
- Saute/fry till mix starts sticking, about 6 min, stirring occasionally and scraping the bottom well.
- Stir in lowfat milk and catsup.
- Cook 2 more min.
- Remove from heat and allow to cold.
- Mix grnd beef, grnd pork, vegetable mix and bread crumbs.
- Mix by hand till thoroughly combined.
- Shape mix into loaf and place in a 13"x9" baking pan.
- Bake, uncovered at 350 degrees for 25 min, then raise temperature to 400 degrees and continue cooking till done, about 40 min longer.
- Serves 6.
