Lobster-Roll Salad
- 3 slice white bread
- 1 1/2 tbsp. margarine or butter
- 1/2 c. low-fat buttermilk
- 3 tbsp. light mayonnaise
- 2 tbsp. fresh lemon juice
- 2 tbsp. snipped chives
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 2 hearts romaine lettuce
- 2 stalk celery
- 8 oz. cooked lobster meat or cooked shelled, deveined shrimp
- Cut bread into 1/2-inch cubes; transfer to large bowl.
- Drizzle with margarine; toss until well-coated.
- In another large bowl, whisk together buttermilk, mayonnaise, lemon juice, chives, salt, and pepper.
- To bowl with dressing, add lettuce, celery, and lobster.
- Toss until well-combined.
- Divide among 4 serving plates.
- Top with croutons.
