Lobster-Roll Salad

  1. Cut bread into 1/2-inch cubes; transfer to large bowl.
  2. Drizzle with margarine; toss until well-coated.
  3. In another large bowl, whisk together buttermilk, mayonnaise, lemon juice, chives, salt, and pepper.
  4. To bowl with dressing, add lettuce, celery, and lobster.
  5. Toss until well-combined.
  6. Divide among 4 serving plates.
  7. Top with croutons.
