Tomato Shrimp Scampi for Two
- 4 oz. fettuccine (or your favorite pasta)
- 2 tbsp. extra virgin olive oil
- 2 cloves garlic, minced
- 2 cups chopped plum tomatoes
- 1/2 cup cooking sherry
- 1/4 cup lemon juice
- 1/2 tsp. sugar
- 1/2 lb. cooked shrimp
- Tabasco sauce, to taste
- Fresh chopped basil
- 2 scallions, chopped
- Grated fresh parmesan cheese
- Cook pasta according to directions on box.
- Sautee garlic in olive oil in large skillet over medium heat for 2 minutes.
- Add tomatoes; cook 5 minutes.
- Add cooking sherry, lemon juice, sugar; simmer 6 minutes.
- Add shrimp and Tabasco.
- Cook until shrimp is hot, about 2 minutes.
- Stir in basil and scallions.
- Toss with pasta and top with parmesan cheese.
