Moms Squash Casserole

  1. Combine squash and water to cover in a medium saucepan.
  2. Bring to a boil.
  3. Cover, reduce heat and simmer 10 minutes or until squash is tender.
  4. Drain well and mash.
  5. Set aside.
  6. Saute onion in butter until tender.
  7. Combine onion, squash, 3/4 cup cracker crumbs, cheese and remaining 5 ingredients.
  8. Spoon into a lightly greased 2 quart casserole or an 11 x 7 inch baking dish.
  9. Sprinkle with remaining 1/2 cup cracker crumbs.
  10. Bake, uncovered, at 350 degrees for 45 minutes.
  11. Yield 6 servings.
